About Us

Andy and I met on a blind date in Dec. 2005. One of my 7th grade students was his neice, and she set us up. Go figure. We saw each other every day after that! We were engaged by June and married in September of 2006. In January, 2008, we welcomed little Ethan into our home, and in August, 2010, little Addison arrived.

Andy is a diesel mechanic at Kennecott. I taught middle school science for ten years, and am now an evidence-based learning specialist for a school district.

fine dining - fat free style


In an attempt to be healthier, AND shed a few pounds, I cooked a new meal tonight that actually turned out to be pretty good . . . Squash Al Fredo!


The Alfredo sauce is a weight watchers recipe, which is mixed with cubed chicken seasoned with season salt. The sauce is then poured of Zuchini noodles, and served with broccoli, and "breadsticks", which are actually Flatouts, that are spread with I can't believe it's not butter, and then sprinkled with parmesean cheese and garlic salt and then placed under the broiler for a few minutes! All in all, it was pretty tasty!

Looks yummy!!!! We will have to give that a try. Always looking for something new to make for dinner and i think all my boys would love that. where do you get the noodles?

I just peeled a zuchini with a regular old peeler! I threw away the skin part, then the rest of the peels were saved for the noodles. I guess I should say I stopped peeling when I got to seeds! Then I boiled them for about 3 minutes.
